Grimm’s Honey Maple Ham with Dijon Glaze 60 mL (¼ cup) each maple syrup, orange juice, and Dijon mustard 15 mL ( 1 tbsp) finely chopped fresh rosemary leaves 2 mL (½ tsp) hot pepper sauce 1 garlic clove, minced 1 Grimm’s Honey Maple Ham 1 Preheat oven to 150°C (300°F). 2 In a medium-size microwaveable bowl, combine maple syrup, orange juice and mustard. Stir in rosemary, hot pepper sauce and garlic. Bring to a boil in microwave and stir. 3 Place Grimm’s Honey Maple Ham in open roasting pan. Cook, uncovered, for 30 minutes. Brush ham with glaze and bake uncovered for an additional 90 minutes. Baste every 30 minutes until glossy and brown. 4 Remove from oven and let rest, brushing often with pan juices for 10 minutes. Slice and serve. SERVES 6 TO 8 Egg White and Red Pepper Rolled Omelette 170 mL (²⁄³ cup) Naturegg Simply Egg Whites, well shaken Freshly ground black pepper 30 mL ( 2 tbsp) finely chopped roasted red pepper 60 mL (¼ cup) shredded part-skim ozzarella cheese 125 mL (½ cup) lightly packed baby spinach leaves 1 slice lean, deli sliced oven-roasted turkey 1 Lightly coat a medium, nonstick skillet with nonstick cooking spray and set over medium heat until hot but not smoking. Pour Naturegg Simply Egg Whites into the skillet and season with pepper to taste. Sprinkle roasted red pepper, cheese and spinach over the omelette; arrange the turkey slice on one side. Cook, covered, for 1 minute or until mostly set. 2 Use a heatproof, rubber spatula to loosen the dges of the omelette from the pan. Tilt the pan at a 45-degree angle and use the spatula to roll the omelette like a pinwheel. Remove from heat and let stand, covered, for 1 minute. SERVES 1 Smoked Salmon, Cracked Pepper and Lime Tartlets Phyllo tartlets: One sheet of phyllo pastry Butter, melted 1 lime, peeled and segmented 125 mL (½ cup) crème fraiche (you can substitute cream cheese or sour cream) 225 g Premier Seafoods Wild Smoked Sockeye Salmon 2 mL (½ tsp) freshly cracked black peppercorns 60 mL (¼ cup) fresh chives, chopped 1 Create the tartlets by carefully laying flat 1 sheet of phyllo pastry over a cutting board. Using a clean brush, gently butter the pastry sheet. Using a chef’s knife, cut he sheet into 5 cm x 5 cm (2-inch x 2-inch) squares. 2 Butter the muffin cups and line each one with 3 buttered phyllo squares layered at different angles. Bake pastry for 5 to 7 minutes in the oven or until they turn a light golden brown. 3 Slice lime segments into 1. 3 cm (½-inch) pieces. Spoon 5 mL ( 1 tsp) of crème fraiche into the base of each tartlet. Top with a strip of Premier Seafoods Wild Smoked Sockeye Salmon and a lime segment. Sprinkle with freshly cracked black peppercorns and chopped chives. Serve cold. SERVES 12 Prosciutto Wrapped Shrimp 12 large cooked shrimp 15 mL( 1 tbsp) lemon juice 5 mL( 1 tsp) honey 1 garlic clove, minced 45 mL ( 3 tbsp) oil 12 slices Beretta Imported Sliced Prosciutto 1 In a bowl, mix shrimp with other ingredients, except Beretta Imported Sliced Prosciutto and oil. Marinate for 2 hours. 2 Wrap each shrimp with a slice of the prosciutto. 3 Heat oil and add shrimp to skillet. Cook for about 2 minutes on each side, or until prosciutto is crispy. SERVES 6 TO 12 Crab Cakes 2 cans (170 g each) Ocean’s Crabmeat with Leg Meat, drained and patted dry 500 mL ( 2 cups) mashed red potatoes (with no milk or water added) 85 mL (¹⁄³ cup) finely diced red bell pepper 60 mL ( 4 tbsp) finely diced green onions 30 mL ( 2 tbsp) lemon juice 30 mL ( 2 tbsp) Dijon mustard 30 mL ( 2 tbsp) mayonnaise 10 mL ( 2 tsp) Kirkland Signature maple syrup 10 mL ( 2 tsp) Worcestershire sauce Pinch of salt and pepper to taste 60 mL ( 4 tbsp) oil 1 In a large bowl, mix Ocean’s Crabmeat with Leg Meat, mashed potatoes, red bell pepper, green onions, lemon juice, Dijon mustard, mayonnaise, maple syrup, Worcestershire sauce, and salt and pepper. 2 Heat oil in a skillet over medium heat. Form mixture into 6 patties (for appetizers form 12 smaller patties). Cook patties in skillet for about 5 to 10 minutes on each side until golden brown. SERVES 6 TO 12
