1 30 cm (12-inch) whole-wheat pizza crust
10 mL ( 2 tsp.) olive oil
125 mL (½ cup) zesty pizza or tomato sauce
1 fresh tomato, sliced
300 g ( 10½ oz.) Kirkland Signature goat
cheese, sliced into thin medallions
30 mL ( 2 tbsp.) fresh basil, cut into thin strips
5 mL ( 1 tsp.) fresh parsley, torn into small pieces
Preheat oven to 220 C (425 F).
The best method for baking pizza is to use a pizza
stone. Heat the stone in the oven at 220 C (425 F)
for 20 minutes.
Prepare the crust: Sprinkle the cornmeal or flour on a
surface and place the crust on it. Spread the olive oil
over the entire pizza crust to the edges, then spread
desired amount of sauce in the middle, leaving a
thin strip around the edge. Add tomato slices and
goat cheese, followed by the basil and parsley.
Carefully place the pizza on the stone in the oven;
bake for 8 to 12 minutes, or until the crust is golden
brown (watch carefully) and the goat cheese
medallions begin to melt. Makes 4 to 6 servings.
Note: A baking sheet can be used instead of a
pizza stone. Do not preheat the sheet.
Citrus Goat Cheesecake
with Strawberry Sauce
300 g ( 10½ oz.) Kirkland Signature goat cheese
680 g ( 1½ lbs.) cream cheese
375 mL ( 1½ cups) graham cracker crumbs
45 mL ( 3 tbsp.) butter or margarine
500 mL ( 2 cups) sour cream, divided
375 mL ( 1½ cups) sugar
15 mL ( 1 tbsp.) fresh lemon juice
5 mL ( 1 tsp.) vanilla extract
5 mL ( 1 tsp.) orange zest (finely grated or chopped)
15 mL ( 1 tbsp.) Grand Marnier
250 mL ( 1 cup) strawberry jam
Bring the cheeses to room temperature. Preheat oven
to 175 C (350 F).

Grease a 23 or 25 cm (9- or 10-inch) springform cake
pan with butter or cooking spray. In a small bowl, blend
cracker crumbs and butter, and press into the cake pan.
Bake for 7 to 8 minutes to lightly brown crust.
In a mixer or with an electric hand-held mixer, blend cream
cheese only for 5 minutes. Add 250 mL ( 1 cup) of sour
cream, goat cheese and sugar, and continue beating for
5 minutes. Add eggs one at a time, lemon juice, vanilla
and orange zest, and continue beating for 1 minute.
Great ideas for goat cheese
● Add to pastry-based appetizers such as spinach turnovers and pear dumplings.
● Soften and use instead of butter on rolls or sandwiches.
Pour cheesecake batter into cake pan and bake for
45 minutes, reduce heat to 150 C (300 F) and continue
baking 30 minutes or until the cake is set. Remove and
allow to totally cool before the next step.
● Pan-fry with bread crumbs and toss in a mixed green salad.
● Soften and whip with ranch dressing and fresh herbs for a veggie dip.
● Add to mashed potatoes, omelettes, cooked pasta dishes and meatballs.
Mix the Grand Marnier with 250 mL ( 1 cup) of sour cream
and spread evenly on top of the cake. Mix the strawberry jam
with some water to the desired consistency for the sauce.
● Soften and add to baked apple or pear turnovers.
Cut cake into 14 to 16 slices and pour sauce over the
centre of each slice. Makes 14 to 16 servings.
